No-Bake Energy Bites

These “No Bake Energy Bites” are from the great kids' food blog Smashed Peas & Carrots. They are a favorite in our house (and pretty much anywhere I bring them). We just call them “peanut butter balls”. My son and I make them together. They’re great for satisfying a sweet tooth while still providing fiber, protein and Omegas. Plus, the oatmeal is great for supporting milk supply. They are great to have on hand when you don’t have time to prepare a snack, and just want something to grab and go. (Pretty much all the time when you’ve got littles.) I’ve tried almond and cashew butter, but I like the peanut butter the best. You can replace the chocolate chips with raisins, if you don’t want the extra sugar. If you keep the chocolate chips, I highly recommend sticking with the mini ones - the regular size ones make it difficult to get the balls to stick together. Otherwise, they are super-forgiving, so have fun and experiment! You could even try adding galactagogues such as fennel or brewer’s yeast.
